Would it be possible for (top down style) units to have a ‘chessboard style’ style movement, ie. only ever having one unit per node at any one time?
To clarify, could each unit to claim the path node it’s currently moving to, then check if the next node in the path is claimed or free to use before carrying on with its path?

Sure, you can do that. You will need to write some code to control it yourself of course, but you can block any node you want at any time.
Any units with a path already would need to repath if their path is no longer valid, again a process you would need to initiate yourself.
The API for doing both is in place.
